Nothing beats a heaping bowl of spaghetti! Complete with grape tomatoes, butter beans and fresh basil, this simple and healthy meal is loaded with delicious flavour. Ready in under 30 minutes, this definitely deserves a spot in your weekly dinner rotation.
Tomato Basil Spaghetti with Butter Beans
12 ounces Jovial gluten-free spaghetti
1/4 cup olive oil
1/2 cup chicken broth
1 (398 mL) can butter beans
1 small red onion, sliced
4 garlic cloves, minced
2 dry pints of grape tomatoes, halved
1/4 cup basil, roughly chopped
Salt and pepper to taste
Chili flakes to taste
Bring a large pot of salted water to a boil over high heat. Cook pasta according to package directions.
Heat olive oil in a large saucepan over medium-high heat. Add red onion, season with salt and pepper, and cook for 1 minute
Add tomatoes, garlic and chili flakes, cook for 4 minutes.
Add beans and broth, season with salt and pepper, cook for 7 minutes.
Drain pasta. Stir in the pasta and basil, cook until the liquid has evaporated, about 1 minute.
Top with chili flakes (optional) and serve.
