No oats? No problem! Warm up your mornings with a big bowl of steaming quinoa porridge topped with strawberry compote, caramelized banana, and pumpkin seeds. The perfect oatmeal alternative that will keep you full and satisfied for hours!
Quinoa Porridge Topped with Fruit & Seeds
1 cup quinoa flakes
2 cups plant-based milk
2 tablespoons pumpkin seeds
1.5 cups frozen strawberries
3 tablespoons water
1 ripe banana, peeled/sliced
1 tablespoon coconut butter
1 tablespoon honey
1/2 teaspoon ground cinnamon
Add strawberries and water to a saucepan, bring to a boil. Cook over medium-high heat, until thickened, about 5-6 minutes.
Heat coconut butter, honey and cinnamon in a small skillet over medium heat. Fry the banana slices for 2-3 minutes on each side, until golden and caramelized.
Add quinoa flakes and water to a saucepan, bring to a boil. Cook over medium heat, stirring gently until thickened, about 2 minutes. Add more milk if needed.
Serve quinoa porridge topped with strawberry compote, caramelized banana and pumpkin seeds.
