Quinoa Porridge Topped with Fruit & Seeds


Serves 2


ingredients

  • 1 cup quinoa flakes

  • 2 cups plant-based milk

  • 2 tablespoons pumpkin seeds


strawberry compote

  • 1.5 cups frozen strawberries

  • 3 tablespoons water


caramelized banana

  • 1 ripe banana, peeled/sliced

  • 1 tablespoon coconut butter

  • 1 tablespoon honey

  • 1/2 teaspoon ground cinnamon


method

  1. Add strawberries and water to a saucepan, bring to a boil. Cook over medium-high heat, until thickened, about 5-6 minutes.

  2. Heat coconut butter, honey and cinnamon in a small skillet over medium heat. Fry the banana slices for 2-3 minutes on each side, until golden and caramelized.

  3. Add quinoa flakes and water to a saucepan, bring to a boil. Cook over medium heat, stirring gently until thickened, about 2 minutes. Add more milk if needed.

  4. Serve quinoa porridge topped with strawberry compote, caramelized banana and pumpkin seeds.
