Thick and creamy pumpkin pie chia pudding topped with mulberries, coconut chips, hemp hearts and cacao nibs.
Pumpkin Pie Chia Pudding
1/4 cup chia seeds
1/2 cup plant-based milk
1/2 cup coconut milk (can)
3/4 cup pumpkin puree
3 tablespoons pure maple syrup
1-2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla extract
Combine chia pudding ingredients in a high-speed blender; blend until very smooth.
Transfer chia pudding to a jar/bowl and top with mulberries, coconut chips, hemp hearts and cacao nibs.
