Hearty Kale Salad

A hearty mix of kale, roasted brussels sprouts, chickpeas, red onion, pomegranate and a deliciously tangy sesame peanut dressing.



Hearty Kale Salad


Serves 2


ingredients

  • 1 large kale bunch, stems removed/chopped

  • 1 tablespoon olive oil

  • 1/2 red onion, sliced

  • Arils from 1 pomegranate

  • Sea salt and cracked pepper, to taste


chickpeas

  • 1 (425g) can chickpeas, drained/rinsed

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon coconut aminos

  • 1 teaspoon pure maple syrup


brussels sprouts

  • 1 pound brussels sprouts, quartered

  • 2 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika


sesame peanut dressing

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon sesame oil

  • 1/4 cup lemon juice

  • 1 tablespoon pure maple syrup

  • 1 tablespoon natural peanut butter

  • 1/2 teaspoon cayenne

  • 4 garlic cloves


method

  1. Pre-heat oven to 400 degrees F. On a large parchment-lined baking sheet, combine chickpeas, olive oil, garlic powder, onion powder, paprika, cumin, maple syrup, coconut aminos, salt and pepper. Keep chickpeas to one side of the baking sheet; roast for 15 minutes.

  2. In a small bowl, combine brussels sprouts, olive oil, garlic powder, onion powder, paprika, salt and pepper. When the chickpea timer goes off, add brussels sprouts to other side of baking sheet. Roast for 15 minutes, or until brussels sprouts are lightly charred and crisp.

  3. In a large salad bowl, drizzle olive oil and salt over the kale and massage with your hands for 3-4 minutes until kale is tender and soft.

  4. Add olive oil, sesame oil, lemon juice, maple syrup, peanut butter, cayenne and garlic to a blender/mini food processor; blend until smooth.

  5. Combine kale, roasted chickpeas, brussels sprouts, red onion and pomegranate. Drizzle dressing over top and toss to combine. Serve immediately.
