Grain Free Granola

Yields about 4 cups

  • 1 cup walnuts, roughly chopped

  • 1 cup puffed quinoa

  • 1 cup buckwheat groats

  • 1/4 cup chia seeds

  • 1/2 cup pumpkin seeds

  • 2 tablespoons hemp hearts

  • 1/2 cup pure maple syrup

  • 1/4 cup natural peanut butter

  1. Pre-heat oven to 300 degrees F. Line a large baking sheet with parchment paper, set aside.

  2. Combine all dry ingredients in a medium-size bowl.

  3. Add peanut butter and maple syrup to a small saucepan; place over medium-low heat, stirring frequently until combined. Pour over dry ingredients; stir mixture until well coated.

  4. Spread mixture in a thin layer on parchment-lined baking sheet; bake until golden, about 25 minutes. Rotate baking sheet at the 15-minute mark.

  5. Cool before serving or storing. Once cooled, break granola up into pieces.

  6. Store in your pantry in an air-tight container for up to 2 weeks.
