Top your favourite breakfast smoothies or yogurt parfaits with this delicious mix of walnuts, buckwheat groats, puffed quinoa, hemp hearts, chia and pumpkin seeds. Grain-free and naturally sweetened with maple syrup!
Grain Free Granola
Yields about 4 cups
1 cup walnuts, roughly chopped
1 cup puffed quinoa
1 cup buckwheat groats
1/4 cup chia seeds
1/2 cup pumpkin seeds
2 tablespoons hemp hearts
1/2 cup pure maple syrup
1/4 cup natural peanut butter
Pre-heat oven to 300 degrees F. Line a large baking sheet with parchment paper, set aside.
Combine all dry ingredients in a medium-size bowl.
Add peanut butter and maple syrup to a small saucepan; place over medium-low heat, stirring frequently until combined. Pour over dry ingredients; stir mixture until well coated.
Spread mixture in a thin layer on parchment-lined baking sheet; bake until golden, about 25 minutes. Rotate baking sheet at the 15-minute mark.
Cool before serving or storing. Once cooled, break granola up into pieces.
Store in your pantry in an air-tight container for up to 2 weeks.
