No Bake Quinoa DoughNOTs

I don't bake, I freeze! With just six simple ingredients, these no-bake pomegranate loaded chocolate peanut butter quinoa dough-nots couldn't be easier or more delicious! I like making them over the weekend so I have a sweet treat ready when the sugar cravings hit during the week.

Yields 6

ingredients

  • 1 cup cooked quinoa

  • 1 cup pomegranate arils

  • 1/3 cup natural peanut butter

  • 1/4 cup cacao powder

  • 1/4 cup pure maple syrup

  • 2 tablespoons chia seeds


method

  • Add dough-not ingredients to a medium sized mixing bowl; stir well to combine.

  • Use a spoon to scoop out heaping tablespoon-sized amounts of the mixture into a silicone donut pan. Flatten with a spoon (or your fingers) so donuts are uniformed.

  • Pop donut pan in freezer overnight (or at least 6 hours).

  • Store in an airtight container in the fridge for up to 1 week or freezer for up to 1 month.
